My off the top of my head list:
1990 - Going over some older veteran so maybe Arn Anderson or Terry Funk. I'll go with Funk. That'd be insane.
1991 - Vader. Because duh.
1992 - Sting. Young guy v Established guy. This would be Taker's welcome to the main event match.
1993 - Dustin Rhodes. WCW trying to get Rhodes over still. Would be a fun match
1994 - Hulk Hogan. Taker in the Dungeon. Hogan comes in and gets screwed by dark heel. He gets his win back eventually but Taker is now a huge American heel.
1995 - Randy Savage. Taker continues his tour of beating ex-WWF guys, this time beating Savage in what would be a fun match.
1996 - Ric Flair - Let's ramp up the streak a bit shall we. Flair v Taker in 96 would be HUGE, and after the match Taker could turn face to take on the nWo
1997 - Kevin Nash - Sting is still the man against the nWo, but Taker gives him backup and gets the win over the arguable nWo #2
1998 - Goldberg - The biggest match. Streak vs Streak. Taker v Goldberg. Nuff said
1999 - Jeff Jarrett - Double J is the first wrestler to use the beat the streak gimmick. He use guitar, cheating but Taker gets it done
2000 - Scott Steiner - Taker, as face of WCW vs nWo 2000 head honcho Scott Steiner in a super physical brawl.
Taker then goes to WWF and loses to Shane McMahon for control of WCW at WrestleMania 18
